For today’s dinner, I made Galbi Gimbap (Pork Rib Gimbap)! I had a lot of leftover pork ribs, so I decided to use them up. I stuffed the seaweed rolls with lots of lettuce, plenty of meat, Ssamjang (Korean spicy dipping sauce), cucumber peppers, perilla leaves, and pickled radish slices (Ssam-mu). Then, I rolled them up tight.
Yum, it tasted so good! I bought a tube-type Ssamjang at the grocery store recently. It was so convenient to just squeeze it onto the ingredients. Honestly, the Ssamjang was the game changer!
In Korean households, we often make Gimbap like this. It’s super easy to just take leftovers and fresh vegetables and roll them together.
For my daughter, I made a special roll. I took out the spicy peppers and added yellow pickled radish (Danmuji) and carrots instead.
Tonight’s dinner mission: Accomplished!
